“Moody” Berry Lemonade Cheesecake Bars

The photos are so bad for this. I just got LAZY. And complacent.

And I wanted to EAT. I didn’t want to take stupid PICTURES.

Because these bars WERE SO GOOD ok?

Just accept this crappy montage of photos.

And then go make this.

Crust
200 gm digestives biscuits
4 Tbsps butter

Berry Filling
1/3 cup of raspberry (any type should do) jam (Yes, it’s THAT easy)

Cheesecake Layer
1 (8-oz) pkg cream cheese, room temp
1/4 cup sugar
1 lemon, zested and juiced
1 egg
1/2 tsp vanilla extract
1 Tbsp flour
pinch of salt

Preheat the oven to 175C/350F. Line an 8×8 inch baking pan with foil.

Pulse digestives in a food processor until finely ground. Add the melted butter and pulse.

Press the mixture into the bottom of the prepared pan. Bake for about 10 minutes, until golden brown. Let cool.

Spread jam evenly over partially baked crust.

Beat the cream cheese and sugar until well combined and smooth. Beat in the lemon zest, lemon juice, eggs, and vanilla until combined.

Add in the flour and salt and beat until just combined.

Spoon over jam to cover.

Bake 20-25 minutes. Cool completely. Chill 1 hour.

Cut into bars. Carefully remove so that it doesn’t break.

EAT.

It’s tart and wonderful and homey and you will thank me so make it.
